12 Days of Christmas: Favorite Recipes

It’s almost Christmas! This means the roads are packed with shoppers, grocery stores are out of that one ingredient you need, and you can’t even get into the post office parking lot. Being a wedding coordinator, planning obviously comes easy for me! I always try to have my shopping done by the first – maybe second – week in December. I’m fairly patient, but I really can’t stand the Christmas crowds.
I tried to get into the grocery store for an impromptu baking session this afternoon but decided to turn around once I saw the parking lot. This got me thinking about Christmas dinner and how excited I am that it’s sooo close (so close that I can almost taste it!). Of all of the things that the holidays bring, having dinner at my mom’s house with the whole family is what I love the most. No one can cook as well as my mom… and no one even compares to the spread she puts out. My favorite christmas dinner dish is definitely her homemade macaroni and cheese. And then my grandma’s marshmallow/pineapple fluff. And my aunts homemade bread. And my sisters pies. And of course a little holiday cheer in the wine glasses.

Moms Baked Macaroni and Cheese
8 ounces elbow macaroni
1/2 stick butter
4 tbsp. flour
2 c. of milk
1 c. grated sharp cheddar
1 c. grated colby jack
1/2 cup bread crumbs
Salt and pepper
Bring 4 qt. salted water to a rapid boil and cook the macaroni until tender. Drain macaroni and put into casserole dish.
In saute pan, melt butter. Once melted, slowly stir in the flour and milk. Simmer over low heat, stirring constantly until the sauce is thickened and smooth. Add cheese and continue stirring until the cheese melts.
Pour melted cheese sauce over noodles in casserole dish. Mix together throughly. Sprinkle extra cheese and breadcrumbs on top of macaroni.
Bake at 350 degrees 30 minutes or until heated all the way through and golden brown on top.
