It’s funny how your taste buds change as your grow up. My grandmother made this special recipe every single Christmas. I used to just walk away from the cookie tray and wish she’d make something else. I don’t know what happened, but now I can’t seem to get enough! When she passed away in 2008 I decided to continue her tradition… the only bad thing is the only recipe I could find in her own handwriting makes 5 dozen cookies! (And trust me – I’ve tried to cut it in half… it just doesn’t work.) So, here is my favorite Christmas cookie recipe – straight from my grandma’s kitchen!
Nanny’s Tom Thumbs
16oz cream cheese, softened
1 lb. butter ( 2 cups)
5 cups flour
2 1/4 c. brown sugar
1 tsp vanilla
2 1/2 c. finely chopped walnuts
3 eggs
4 tbsp. melted butter
Mix together butter, cream cheese and flour. Scoop into small muffin/cupcake pan. Use the bottom of a shot glass to make “thumb” print in each scoop (basically you’re creating a shell).
Mix the rest of ingredients together for the topping – scoop a small amount into shell (not too much, it’ll overflow!)
Bake for 32 minutes @ 350. Makes 5 dozen thumbs.
